Released in 2000 by Yakima Chief Ranches, Simcoe is a dual-purpose hop known for its complex piney, citrusy, and slightly earthy character. It delivers a clean bittering quality and is the parent of Mosaic. A staple in West Coast IPAs and widely used in hazy IPAs as well.
